The trompo
We carve it when you order. Not a minute before.
Our dad, Ramón, learned the trompo at a street stand in Puebla and carried the recipe north in a notebook that still sits above the register. Guajillo and ancho chiles, achiote, vinegar, a little pineapple juice, and two full days in the adobo. Every taco at Tres Limones still starts there.
Every morning we slice the pork thin, stack forty pounds of it on the spit, crown it with a whole pineapple and light the burner. By lunch there is a line. By close there is nothing left, which is the point.

Do you take reservations?
No. Order at the counter and we call your name. The line moves faster than it looks.
Is there anything for vegetarians?
Yes. Nopales tacos, the frijoles, elote and chips with guacamole. Ask and we press your tortillas on the clean side of the grill.
Is the salsa bar really free?
Yes. Six salsas, as many trips as you like. The habanero is labeled for a reason.
Can I bring my dog?
On the patio, yes. We keep a water bowl by the door.
How much notice do you need for catering?
Three days for most orders. For more than a hundred guests, give us a week.
